Species of fungus _**Pleurotus ostreatus**_ , the **[oyster mushroom](/wiki/Oyster_mushroom "Oyster mushroom")** , **oyster fungus** , or **hiratake** in japanese, is a common edible mushroom.[2] It was first [cultivated](/wiki/Fungiculture "Fungiculture") in Germany as a subsistence measure during [World War I](/wiki/World_War_I "World War I")[3] and is now grown commercially around the world for food. It is related to the similarly cultivated [king oyster mushroom](/wiki/Pleurotus_eryngii "Pleurotus eryngii"). Oyster mushrooms can also be used industrially for [mycoremediation](/wiki/Mycoremediation "Mycoremediation") purposes. The oyster mushroom is one of the more commonly sought wild mushrooms, though it can also be cultivated on straw and other media. It has the bittersweet aroma of [benzaldehyde](/wiki/Benzaldehyde "Benzaldehyde") (which is also characteristic of bitter almonds).[4] Both the Latin and common names refer to the shape of the fruiting body.[2] The Latin _pleurotus_ (sideways) refers to the sideways growth of the stem with respect to the cap, while the Latin _ostreatus_ (and the English common name, [oyster](/wiki/Oyster "Oyster")) refers to the shape of the cap which resembles the bivalve of the same name.[2] The reference to _oyster_ may also derive from the slippery texture of the mushroom.[2] The name _grey oyster mushroom_ may be used for _P. ostreatus_.[5]
